Summer Treats

Bret and I tried the new Mocha Coconut Frappuccino this week. I was in heaven! It is so good but basically a milk shake. It's awful for you...but def a yummy treat. I love coconut:

Totally on a coconut kick. With my sore throat this week I've been enjoying these too... ahh...they just feel like summer in your mouth:

We had a bag full of grapefruits from Costco that we're just okay and not that great for eating by themselves so I found a way to use them up. Grapefruit Ganita! Soooo refreshing. It tasted like an italian ice. I found the recipe on Food Network. Bret loved it too. Perfect summer dessert. A little sweet and a little tangy. It's pretty too. 


  • 2 1/2 cups fresh pink or rubgrapefruit juice, at room temperature
  • 1 cup boiling water
  • 1/3 cup superfine sugar


Combine juice, water and sugar in bowl and whisk until the sugar has dissolved. Pour liquid into a 13 by 9-inch baking pan. Freeze until hard, about 3 to 4 hours.
To serve, scrape with a fork and spoon the scrapings into small chilled martini glasses or small glass bowls. Garnish with small sprigs of fresh mint.
